Topinambur, manchmal auch Sunchoke genannt, ist die Knollenwurzel einer sonnenblumenähnlichen Pflanze. Viele Landwirte betrachten die Pflanze als Unkräuter, da ihre beständige Natur die Kontrolle auf den Feldern erschwert.

Pflanzen wachsen ungefähr sechs bis zehn Fuß hoch. Reife Knollen sind wie kleine knorrige irische Kartoffeln. Die meisten sind drei vor vier (3 bis 4) Zoll lang und halb so dick. In der Nähe jedes Blütenstiels werden mehrere Knollen produziert.
